Farmer’s Frittata

This frittata is a perfect early morning dish that doesn’t have a multitude of ingredients or take an hour to bake. Hence the name “Farmer’s Frittata!”

Although you can choose whichever toppings you prefer, my favorite is leftover baked cherry tomatoes or diced leftover Tomatoes Provençale. Be sure to adjust your broiling time depending on how much moisture is in the toppings.


Farmer’s Frittata Recipe

Ingredients:

  • 8-10 Eggs

  • 1/4 cup Whole Milk

  • Salt and Pepper

  • Toppings

Instructions:

  1. Prep your toppings and set aside. Preheat a 10” cast iron skillet (or other oven-safe skillet) over medium heat.

  2. Beat the eggs and milk together in a mixing bowl.

  3. Grease the preheated skillet with a tablespoon of butter or tallow. Swirl to coat the bottom.

  4. Pour the egg/milk mixture into the skillet and DO NOT STIR. Season with salt and pepper.

  5. Cover the pan with a lid and let the eggs cook for about five minutes, until the sides begin to set.

  6. While eggs are cooking, turn your oven onto broil on the high setting.

  7. Remove the lid from the skillet and add the toppings, if using cheese, put that on last.

  8. Place the pan in the oven under the broiler for 5-10 minutes, until the top of the frittata is cooked through and cheese is lightly browned. Watch closely. You don’t want to burn your toppings.

  9. Remove the pan from the oven. Let the frittata cool for about 5 minutes before serving.

Topping ideas:

Bacon, sausage, cheddar, feta, or parmesan cheese, tomatoes, peppers, onions, chopped greens, chives, or whatever else is in your kitchen!
