Homemade Eggnog
Many people enjoy eggnog during the holiday season when it's available in the refrigerated section of the grocery store. Most of these packaged brands are filled with the typical ingredients like thickeners, stabilizers, artificial colors and flavors; some are also sweetened with high fructose corn syrup.
What is eggnog, anyways?
Eggnog is a sweet, spicy, and decadent drink crafted from a base of milk and eggs.
It's simple to make so why not make healthy eggnog in your own kitchen with farm fresh ingredients!
I have been experimenting with cooked vs. raw eggnog. In my opinion, cooked eggnog is yummy as a custardy dish (maybe I just overcooked mine), but raw is my preference for a refreshing drink. Plus, raw eggnog is much easier to make!
Farm Fresh Eggnog
6 large farm fresh eggs, seperated (from a reputable source)
2 cups raw whole milk
1 1/2 cups raw cream
1/2 cup maple syrup
1/2 tsp cinnamon
1/2 tsp nutmeg
Pinch of fine sea salt
2 tsp pure vanilla extract
Directions:
Combine all ingredients, except egg whites and 1/2 cup cream, in blender and blend until thoroughly mixed.
Add 1/2 cup reserved cream and the 6 egg whites to the bowl of a stand mixer and whip with the whisk attachment until stiff peaks form
Blend both mixtures together with a whisk and pour into glasses or serving container. Refrigerate leftovers.
